Which surface should I use?

Start with the Post-purchase page if your store takes credit card payments through the online store: it is the only surface where accepting is a single click that charges the card the customer already used, and it cannot cost you the original order. Use Thank-you page if another app holds your post-purchase slot or your orders are mostly ineligible for post-purchase pages. Use Checkout only if you are on Shopify Plus and want the offer before payment.
A surface is chosen per upsell, in the Surface field of the Details section. You can run different upsells on different surfaces at the same time.

Post-purchase page
The strongest offer mechanically: one click, no re-entering payment details, and the product ships with the rest of the order. The catch is eligibility — Shopify does not show a post-purchase page for wallet and installment payments (Shop Pay's wallet, Apple Pay, Google Pay, Klarna and similar), gift card purchases, local delivery, orders under $0.50, orders with duties and multiple currencies, or orders from any sales channel other than the online store. If most of your orders go through accelerated wallets, most customers will never see this surface.
It is also exclusive: only one app in your store can hold the post-purchase slot.

Thank-you page
Works on every order that reaches the order confirmation page, whatever the payment method, and does not compete for the post-purchase slot. The trade-off is the accept flow: Hype adds the item to the order, then sends the customer to Shopify's hosted page to pay the difference. That is a second payment step, and if the customer abandons it the item sits on the order unpaid until you deal with it.
Use it when the post-purchase page is unavailable to you, or alongside a post-purchase upsell as a fallback for customers whose payment method skipped the post-purchase page.

Checkout
Shopify Plus only. The offer appears while the cart is still editable, so accepting simply adds a discounted line and the customer pays once. There is no second payment and no order edit.
The cost is attention: the offer sits in the middle of the checkout the customer is trying to finish. Keep the trigger tight and the offer obviously relevant.

Running more than one upsell
Only one offer is shown per surface per order: the most recently created Active upsell whose trigger matches. Older upsells on the same surface act as fallbacks when the newer ones do not match, so order your triggers from specific to general — a narrowly targeted upsell created last will win over a catch-all created earlier.
Upsells on different surfaces are independent. A customer can be offered something in checkout and something else on the post-purchase page of the same order.
